Quenelleof pike, Nantua sauce

Made up the same morning, poached to order, fifteen minutes under the broiler. The recipe comes from Margot’s grandmother, who kept a bouchon on rue Vaugelin and never wrote anything down. Served with rice and a lamb’s lettuce salad.

The menu

The menu turns with the Croix-Rousse market, on Tuesdays and Saturdays. Everything is made here, apart from the bread. That comes from Pernaudet, two streets down.

Nearest metro, six minutes on foot, uphill. We are on the corner, just past place des Tourdines. Six tables outside as soon as the weather turns. Margot is in the kitchen, Julien looks after the room.
